If you’re visiting London, you’ll be able to sip botanical cocktails at a new living, breathing bar that has just opened there. A range of herbs, botanicals and garnishes covers the back bar of the newly-opened Living Bar at Bourne & Hollingsworth Garden Room, which is located on the tenth floor of Assembly Hotel on Charing Cross Road.

The idea is to create an interactive drinking experience in which visitors can hand-pick ingredients for mixologists to add to their drinks. Green trellises adorn the front of the bar and cascade down from the ceiling, and boxes and fruit and herbs are added to tables around the room so guests can choose garnishes to add to their beverages.

These include mint, lavender, basil, orange blossom, lemon balm and rose petals, and bartenders are on hand to help guests create their bespoke beverages. A number of signature cocktails using these ingredients are also available at the bar.

This floral haven forms part of the Bourne & Hollingsworth Garden Room, which is open for breakfast, brunch, lunch and dinner. The whole room is filled with living, green organic plants, ranging from fully-grown trees and trailing creepers to leafy statement plants.
